Eating oatmeal may reduce the risk of heart disease. Because old fashioned oats contain two grams of soluble fiber per serving, one bowl of cereal at breakfast meets 2/3 of the daily recommended amount.

 

Cinnamon Apple Oatmeal

Serving 1 or 2

1/2 tart apple
2 tsp. brown sugar
1/8 tsp. cinnamon
1 shake nutmeg
1 c. water
1/2 c. "old fashioned" oats
1/4 c. milk (optional)

Serving 3 or 4

1 tart apple
4 tsp. brown sugar
1/8 tsp. (rounded) cinnamon
1 shake nutmeg
1 1/2 c. water
3/4 c. "old fashioned" oats
1/2 c. milk (optional)

Slice a medium sized apple in half. Peel, quarter and core the apple, then cut apple into bite-sized chunks. (Reserve unused portion for snack at lunch or coffee break.) Place cut apple in a microwave safe bowl. Sprinkle with brown sugar, cinnamon and nutmeg. Microwave spiced apple for 1 to 1-1/2 minutes. Add water and oats to warm apples. Return bowl to the microwave and cook on HIGH 2-1/2 to 3 miutes.

Stir oatmeal before serving. Serve with or without milk.


Apples at the Farmers Markets

One of our favorite things to do every fall is trek down to the Olympia Farmers Market.

Located near the waterfront in Olympia, Washington, the market is busy from open to close every weekend, with good reason. It hosts local and regional farmers and craftspeople who sell everything from hand made toys to beef jerky and fresh from the hive honey.

But, the reason we go in the fall is apples. Specifically, a variety of apple called "Star King."

These apples are so good that, during the rare years I don't go down, I'll even accept a box that's delivered by my ex. They are truly that good.

Star King's are a variety of Delicious apples. And, like all Delicious varieties, they are good eating apples. They are great when they've just been picked, but don't store well over the winter.
