Peanut Butter and Banana Rice Cakes

This snack is a great treat to throw in your lunchbox for a break at work. We also take the cakes along for energy during bike rides.

No cooking, minimal clean-up and gluten-free.

Cooking for One or Two

2 tbsp. peanut butter
1/2 banana, sliced
1 tsp. chopped peanuts (optional)
2 peanut butter and chocolate chip rice cakes

Spread one tablespoon of peanut butter evenly over one side of the rice cake. Place thin banana slices on top of the peanut butter and sprinkle lightly with chopped peanuts.

Eat like an open faced sandwich, or, to transport two rice cakes without a mess, sandwich the peanut butter and bannana between two rice cakes.


Other Rice Cake Combos

Rice cakes have come a long way from the hockey pucks most of us encountered years ago. Now, Quaker and several other companies are offering flavored rice cakes that pack a few extra calories than plain rice cakes, but still come in on the low end of caloric treats.

The package for peanut butter chocolate chip rice cakes boasts that each cake is only 60 calories, making each cake a good alternative to one oatmeal raisin cookie, even when you add toppings.

We enjoy caramel corn rice cakes with apple butter and you can try light cream cheese with sliced strawberries drizzled with chocolate sauce to jazz up plain rice cakes for dessert.
