How To Store Fruit Salad

Fruit salad keeps well in the refrigerator. Use plastic bowls such as Tupperware or Ziploc containers with tight lids. Refrigerated fruit salads dressed with mayonaise will be good the next day, but should not be kept longer.


 

Waldorf Salad

One of the old classics, this chunky salad is diet food that doesn't feel like rabbit food. Serve it as a main course with cheese and crackers, or as a side with soup or a chicken pot pie. There are even times when it's a perfect midnight snack.

Cooking for One or Two

1/2 tart apple
1/2 celery stalk
1/4 c. seedless green grapes (optional)
2 tbsp. chopped walnuts
1 tbsp. light mayonnaise

Family Size

1 tart apple
1 celery stalk
1/2 c. seedless green grapes (optional)
1/4 c. chopped walnuts
3 tbsp. light mayonnaise

Wash, core and peel apple. Chop apple into bite size pieces. Finely chop celery. Halve grapes. Place apples, celery, grapes and walnuts in a salad bowl. Add mayonnaise and stir to coat.

Serve immediately and refrigerate any leftovers.


Apples at the Farmers Markets

One of our favorite things to do every fall is trek down to the Olympia Farmers Market.

Located near the waterfront in Olympia, Washington, the market is busy from open to close every weekend, with good reason. It hosts local and regional farmers and craftspeople who sell everything from hand made toys to beef jerkey and fresh from the hive honey.

But the reason we go in the fall is apples. Specifically, a variety of delicious apple called "Star King."

These apples are so good that, during the rare years I don't go down, I'll even accept a box that's delivered by my ex. They are truly that good.

Star King's are a variety of Delicious apples. And like all delicious variets, they are good eating apples. They are great when they've just been picked, but don't store well over the winter.
