Tzatziki


 

Greek Chicken Pita Pockets

This easy sandwich can be served hot or cold. If you're taking it for lunch, put everything in the pita, but leave the tzatziki (yogurt & cucumber dip) off until just before lunch.

Cooking for One or Two

1 pita pocket, split in half
2 tsp. olive oil, optional for warm sandwich
3-6 slices cooked Lemon Oregano Chicken
1 slice feta cheese
2-3 slices ripe Roma tomato
2-3 long pieces of sliced onion
1 tbsp. Tzatziki

Warm sandwich: Split pita in half to form two pockets. Warm the pita in a frying pan with a small amount of olive oil, turning to brown each side of the pita. Slice warm chicken and stuff 1-2 slices of chicken in warmed pita. Add feta, tomato and onion slices. Just before serving, spoon tzatziki over the chicken and vegetables in the pita.

Cold sandwich: Split pita in half to form two pockets. Slice cold chicken and place 1-2 pieces in the bottom of the pita. Add feta, tomoato and onion slices. Just before serving, spoon tzatziki over the chicken and vegetables in the pita.
