Chocolate Chip Cake Mix Cupcakes

These cupcakes take a white cake mix, in our case, Betty Crocker's Super Moist White Cake Mix, and turn it into a familiar treat.   Kids will fight for the last one, or you can freeze extras for your lunch.

Cooking for one or two
    (6 standard muffins)

2/3 C white cake mix
1 1/2 tbsp. butter
3 tbsp. water
1/2 egg (1/8 C Egg Beaters or egg)
1/4 C chocolate chips
1 tbsp. brown sugar
1/4 tsp. vanilla

Family Size
    (12 standard muffins)

1 1/3 C white cake mix
3 tbsp. butter
6 tbsp. water
1 egg
1/2 C chocolate chips
2 tbsp. brown sugar
1/2 tsp. vanilla

Preheat oven to 350 degrees.
    Exactly measure cake mix into mixing bowl. Add butter, water and egg. Mix with hand held mixer until you have a smooth batter. Add chocolate chips, brown sugar and vanilla. Mix with hand held mixer set on "low" until chips and sugar are incorporated.
    Line muffin pan with cupcake cups. Spoon batter into cups until each cup is 2/3 full. Place pan on center rack in oven. Bake 18-20 minutes.
