Turkey Soup

This soup is a good way to use leftover turkey or chicken. It's a meal in itself, but you can serve it with corn chips on the side.

Cooking for One or Two

1 1/4 C chicken broth
3/4 C water
1/2 C cooked turkey
1/3 C chopped carrots
1/2 stalk celery - chopped
1/2 C cooked rice
1 chive - chopped
1/8 tsp. thyme
salt and pepper to taste

Family Size

2 C chicken broth
1 C water
3/4 C cooked turkey
1/2 C chopped carrots
1 stalk celery
3/4 C cooked rice
2 chives - chopped
1/4 tsp. thyme
salt and pepper to taste

Place chicken broth, water, cooked turkey, carrots and celery in a sauce pan. Bring to a slow boil and simmer for 5-7 minutes until carrots and celery are tender. Add cooked rice, chives, thyme, salt and pepper. Simmer 5-7 minutes.
