Turkey-Cran Salad

Salad for One

1 cup field greens mix
1 teaspoon balsamic vinegar
1 teaspoon olive oil
2 oz. lean turkey breast, sliced thin
2 tomato wedges
1 tablespoon dried cranberries
1 tablespoon chopped walnuts

Salad for Two

2 cups field greens mix
2 teaspoons balsamic vinegar
2 teaspoons olive oil
4 oz. lean turkey breast, sliced thin
4 tomato wedges
2 tablespoons dried cranberries
2 tablespoons chopped walnuts

You and your kids will love the sweetness of the cranberries and the crunchiness of the walnuts in this healthy salad.

Toss the vinegar and olive oil with the field mix. Add turkey and tomato wedges. Sprinkle with cranberries and walnuts. In case of a nut allergy, substitute walnuts with crunchy wontons or croutons.
